CrowPanel 2.1inch-HMI ESP32 Rotary Display advice on GPIo Ports

Hi All
I have a the following board , CrowPanel 2.1inch-HMI ESP32 Rotary Display 480*480 IPS Round Touch Knob Screen
I need to add a GPS module and also a stepper motor driver to the panel .

For the GPS , I can use UART which is working , but I need 3 (min 2) pins to drive a stepper motor driver for Step,clk,dir .

One the panel there is only a I2C port open . Usually the screen uses i2C so this probably wont be useful use or modify by tapping in on the GPIO pin .

Any Ideas
